There\u2019s good protein inside, making it a satisfying meal all on its\u2019 own!\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Serves 4-6<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">6 cups organic pumpkin, seeded, peeled, cut into large pieces and roasted\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">1 onion, peeled &amp; cubed<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">1 cup baby kale, chopped coarse<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">2 tbsp chickpea flour<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">4 tbsp nutritional yeast*<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">1 organic egg \u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Extra virgin olive oil<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Pinch of nutmeg<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">2 tbsp pumpkin ceeds, crushed<\/span><\/p>\n<p class=\"p3\"><span class=\"s1\">METHOD<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Take cut Pumpkin and place on baking sheet and cook at 350 degrees until semi-soft and still a little firm, approximately 15-20 minutes.\u00a0<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Once pumpkin is cooked, remove from oven and let it cool.\u00a0<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Saut\u00e9 baby kale and onion until translucent set aside to cool.<\/span><\/p>\n<p class=\"p3\"><span class=\"s1\">Set aside some of the crushed pumpkins seeds for garnish.\u00a0<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Once all cooked ingredients are cool, add remaining ingredients and mash together in a food processor until combined well.<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Oil bottom and sides of a round baking dish with high sides;\u00a0pour the mixture into the mold, leveling it with a spatula.\u00a0Finish it by raking the top with a fork to make rustic lines for presentation.<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Bake the tortina at 350 \u00b0 for about 20-25 minutes. I you want it a little darker on top, put it on low broil \u2013 keeping an eye so it turns golden!\u00a0<\/span><\/p>\n<h4 class=\"p1\"><span class=\"s1\" style=\"color: #000000;\">CREAMED RICOTTA<\/span><\/h4>\n<p class=\"p1\"><span class=\"s1\">1 tub ricotta cheese<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Pinch of nutmeg<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">2 tbsp nutritional yeast*<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">2 tbsp fresh sage or marjoram, chopped fine<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">2 tbsp extra virgin olive oil<\/span><\/p>\n<p class=\"p3\"><span class=\"s1\">METHOD<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Combine all ingredients in a blender and blend until smooth or put it all in a bowl and with a spatula (and a little hard work) work until it is smooth. Set aside to let flavours steep!\u00a0<\/span><\/p>\n<p class=\"p3\"><span class=\"s1\">ASSEMBLY<\/span><\/p>\n<p class=\"p4\"><span class=\"s1\">Cut small triangle of Pumpkin Tortina and place in middle of serving plate. Spoon a generous helping of Creamed Ricotta on top of slice. Sprinkle some of the pumpkin seeds to finish.\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Note \u2013 omit creamed ricotta when serving alongside Chicken or Turkey!\u00a0<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">*Nutritional Yeast is a deactivated yeast that many vegetarians use to get more protein in their diet.
