Has our extreme overindulgence in wheat products caused many of the health problems associated with \u201cgluten intolerance\u201d? Is it the quality of our wheat? Is it over processed and \u201cGMO\u201d? Maybe it\u2019s all true, or maybe we need to be a bit more balanced and smarter with our choices and frequencies about how and what we eat.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">A Canadian Study found in the June 2011 ALIVE! Magazine, suggested that eating nuts, (specifically Pistachio) with pasta, helps to slow down the pasta\u2019s conversion into sugar because the nuts digest at a slower pace due to their natural fat content.\u00a0<\/span><\/p>\n<p class=\"p1\">In this recipe, you can use either brown rice pasta or a good quality under processed pasta like Organic Pasta Toscana. I also take advantage of fresh local Ontario Arugula.\u00a0 These ingredients are readily available in natural supermarkets like Nature\u2019s Emporium in Newmarket or Maple.<\/p>\n<p class=\"p2\"><span class=\"s1\">Serves 4<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">500 g Pasta cooked according to directions<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">1 Lemon, juice and rind<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">1 clove fresh Ontario Garlic, minced<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">2 handful fresh Ontario Arugula, whole<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">2 handfuls of Raw Pistachios<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">Sharp Parmigiano Cheese\u00a0<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">Some good quality Olive Oil<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">Method<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">This dish is called \u201cFresca&#8221; indicating it takes little time to prepare and shouldn\u2019t sit. It is to be eaten fresh off the stove.<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">Wash Lemon and grate all the rind off and set aside. Cut Lemon in half.<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">Heat a little Olive Oil and some Garlic in a small pan and toast all the Pistachios until they\u2019re a little brown. Set aside to cool. When they are cool, coarsely chop them.<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">In a large metal bowl that\u2019s wide enough to sit on your pot of pasta, spoon out cooked pasta. Add some Olive Oil, juice of \u00bd Lemon, half the rind, some Parmigiano and 1 handful of Arugula and \u00bd the Pistachios. Put bowl on top of Pasta pot (which should still have the water in it) and mix well.<\/span><\/p>\n<p class=\"p2\"><span class=\"s1\">Spoon out into plates and top with remaining Arugula, Pistachios, Lemon Rind, squeeze of Lemon juice and Parmigiano.<\/span><\/p>\n<p class=\"p5\"><span class=\"s1\">Fresh Fast and deliciously light for the enjoying in the spring sunshine!<\/span><\/p>\n<p>[\/vc_column_text][\/vc_column][\/vc_row]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>[vc_row][vc_column][vc_column_text] Learn how a few lifestyle changes can make a HUGE impact on your health and happiness with OPUS Homes Wellness Chef Andrew Muto!
