A Holiday Host/Hostess Gift: Panforte Cruda

PANFORTE CRUDA

This is a Wellness Dessert inspired by one of Italy’s oldest sweets… Toscana’s Panforte! This traditional food was so desired that it was used as a tithe to the monks and nuns of the local Monastery. This recipe removes all processed sugar, using only the sweetness of fruit to dictate. It is also unheated, so that all the nutrients stay intact.

Enjoy it with your favourite coffee or alongside Southbrook Organic Wineries Framboise Dessert Wine, or have it as an uplifting end to a beautiful meal or the perfect warm and tasty treat on a cold winter’s afternoon!

Panforte Cruda:

Packed with crunch and flavour, try making this recipe your ‘own’ with other dried fruits and flavours!

Ingredients:

1 cup walnuts

1 cup dates (pitted)

½ cup golden raisins

1 cup almonds

½ cup dried apricots

4 tbsp raw cacao powder

 ½ cup lemon juice & rind

½ cup orange juice and rind

¼ tbsp cinnamon

4 cloves crushed

¼ tbsp nutmeg

4 dried figs

1 pinch of nutmeg

1 pinch of marjoram

In food processor: Blend half the walnuts. When processed fine, add half dates, half the spices, half cacao powder. Pour into a bowl. Coarsely chop (or pulse in food processor) almonds and remaining walnuts and add to the mix. Chop or pulse dried apricots to desired texture and add to mix.  Next, add juice, rinds, raisins and remaining 1/2 cup of cacao. Fold together, mold into patties or balls, and finish with a light dusting of cacao.  

Refrigerate at least an hour before serving.
